Gluten Free Pizza Crust
2/3 cups almond Meal (found at Trader Joe's)
1/3 cup Arrowroot starch (found at Whole foods)
1 tsp. baking powder
1/2 tsp. Sea Salt
2 Tbs Olive Oil
1/3 cup water
Double this recipe for a large pizza.
preheat oven to 425. Oil baking stone.
Mixture will look like wet sand. spread onto baking stone with a spatula and top with desired toppings.
The center will be the last to cook through, so thin it out more than the edges of the pizza dough.
Bake for 20 -25 min. Let cool. it will be flaky, so you might want to eat it with a fork.
Baked Cod/ Tilapia
Soak Fish in Almond milk while prepping breading
Mix in a large bowl or plate;
Almond meal
1 tsp. Chicken bullion
Black pepper
Coat fish in almond meal mixture and place on baking dish. Heat oven to 350 and bake for 15-20 min. Or, heat olive oil in a frying pan to medium heat and place breaded fish in pan. Cook for about 5 min each side with lid on for first 5 min, then off until the fish is done allowing it to crisp up.
Chicken Cacciatore with Mushrooms
4 chicken breasts, halved
olive oil
brown rice flour or almond meal
1 large chopped onion
1/4 ounces fresh chopped mushrooms
2 cloves garlic, chopped
1/4 cup chopped parsley
2 Tbs. dried Oregano
2 Tbs. fresh basil
1 tsp. garlic salt
1/2 tsp. black pepper
2 6ozcans of chopped tomato paste (or marinara sauce)
4 chopped tomatoes
1 tsp. sugar
1/4 pound green beans
1 cup zucchini diced
1 tsp. each of sea salt, paprika, sugar, pepper, garlic powder, cumin, turmeric, lemon peel, cayenne (mixed separately in a small bowl)
Flour chicken pieces with rice flour or almond meal
Brown chicken pieces in olive oil, do not cook through. (sprinkle seasoning mixture of sea salt, paprika, sugar, pepper, garlic powder, cumin, turmeric, lemon peel, cayenne on chicken while browning)
Place in large pot with 1 Tbs. of olive oil.
In the same frying pan, saute onions
Add the mushroom pieces
Add garlic, parsley, oregano, basil, garlic salt and pepper
Add tomatoes and sugar
Saute lightly blending all together
Pour tomato mixture over the chicken in the pot
Add about 1/2 cup water
Add green beans and zucchini, stir lightly.
cover pot and cook on low for about 30 min or until chicken is cooked through.
serve over pasta for those not eating a gluten free meal
Cranberry Apricot Turkey
1/4 cup sugar
2 Tbs. Arrowroot starch (don't boil starch)
3/4 cup apricot jam
1 cup fresh or dried cranberries
2 pounds ground turkey
1 or 2 cups water
salt and pepper to taste
In small saucepan, blend sugar and arrowroot.
Stir in marmalade and cranberries
cook and stir until mixture is bubbly and slightly thickened
Place turkey in large pot with 1 Tbs olive oil
Add a cup or two of water
Sprinkle lightly with salt and pepper
Pour sauce over turkey
Cover and cook on low for 30 min or until turkey is cooked through
Serve with veggies or salad or over quinoa for those not on a gluten free menu
