Enchiladas
1 lb. Ground turkey
1 package McCormick enchilada
seasoning
Shredded cheddar cheese
Spaghetti sauce
8 whole wheat tortillas
In non-stick pan, cook turkey. Add seasoning packet according to directions.
While turkey is cooking, make rice or quinoa.
Layer 1/4 cup of both quinoa/rice and meat topped with cheese in tortilla then fold sides and roll up.
place all rolled tortillas in baking dish, top with spaghetti sauce, sprinkle with cheese. bake at 350 until tortillas are crisp. About 15 min.
